how about the mexican version of tater tot hotdish.....
mix that taco seasoned meat with a can of fiesta cheddar cheese soup (Campbells or the pepper jack one works too). Also add 2 cans of drained mexicorn and about a 1/2 can of milk.(I use half & half). I pour that in with a 9 x 13 baker that has been greased. Then layer on tater tots or the tater crowns are good on this one. Bake 350 for 45 minutes.

Taco in a Bag.
Buy the single sizes of Doritos Nachos, and cut along the LONG SIDE of the bag, not the top. Crunch the chips inside the bag. Add a scoop of burger, sour cream, shredded cheese, lettuce, and salsa, then mix it up with the chips. IT IS TO DIE FOR. Seriously. LOL. Kids AND adults love it....and there are no dishes to wash!
Or....make a salad with spinach/lettuce, slices of red/yellow peppers, shredded cheese, black olives (if you like them!), and sprinkle the warmed meat over top of the salad. You can add some hot sauce, or even Ranch with the salad. Mmmmmm.

Crock Pot Enchiladas
Serves 6
1 lb Ground Beef, lean
1 (8.5 oz) White Onion, chopped
1 (4 oz can) Chopped Green Chilies
1 (14 oz can) Enchilada Sauce
1 (10-3/4 oz can) Golden Mushroom Soup
1 (10-3/4 oz can) Cheddar Cheese Soup
1 (10-3/4 oz can) Cream of Mushroom Soup
1 (10-3/4 oz can) Cream of Celery Soup
Instructions:
Brown hamburger and chopped onion and pour off grease.
Put all ingredients in crock pot. Mix and cook low 4-6 hours.

Oh oh Oh!! I know. Make a southwest style pizza. Especially with tomatoes and bell peppers being in season.
No need for sause if you are using seasoned ground beef. Just make sure to lightly brush your crust with a bit oil (I prefer olive oil) so it doesn't get to dried out.
Try slicing a sweet (I prefer orange or yellow adds beautiful color) bell pepper, sliced (medium slices) tomatoe, two kinds of cheese (I would use mozzarella and cheddar), and your seasoned beef.
Decorate your pizza crust with everything except the tomatoes. About 5 mins before the pizza is done top with tomatoes and sprinkle a bit of additional cheese.
MMmmmm! I'm getting hungry.

If you've got good bread, slice it thick, top it with the meat mix, then add shredded cheese, stick in the toaster oven til it's hot and bubbly.
If it's a fair amount, just mix it up with a can of corn, put it in a baking dish and top with plops of cornbread batter. Bake at 400 til the cornbread is done (about 20 to 30 minutes)
Try just throwing it into some macaroni and cheese... that's awesome stuff!
Another suggestion: Mix it with some corn and sour cream - top with biscuit dough - throw cheese all over the whole works and bake at 400 til bubbly and biscuits are done.
Meat and cheese nachoes - just heat it up and put it on some tortilla chips, top with shredded cheese, bake at 400 til cheese melts and meat is bubbly - top with sour cream, salsa or whatever you want
Taco Salad! Just shred lettuce and chop tomatoes - heat up the meat stuff and throw it on top - add shredded cheese - serve with tortilla chips

my mom used to do this the day after taco dinner: Instead of making tacos, make a salad and put the meat, cheese, salsa on top and sprinkle tortilla chips over it to make a taco salad. She puts catalina dressing but I always just put a little sour cream and extra picante sause to keep it taco-ish!

You can freeze to use at another time. If there's enough of it split it into individual servings for use with nachos or when you just want a taco for a snack.

Recipe for left over roast (pork, beef, chicken) or taco seasoned meat.
Ingredients
6 corn tortillas
1 can red or green enchilada sauce, divided in half for two servings
1 cup (225 ml) grated colby cheese (or chedder and jack)
1 cup (225 ml) refried beans
leftover cooked meat (chicken,beef, pork, taco-seasoned meat, etc.)
chopped tomatoes
shredded lettuce
black olives (optional)
sour cream (optional)
salsa for topping, if desired
Preparation
Place 2 tbsp (30 ml) of sauce on a microwave safe dish.
Spread 1/2 cup (125 ml) of refried beans on 1 tortilla then place on plate with sauce then top with 2 tbsp (30 ml) of sauce.
Add another tortilla and top it with shredded left over meat then cover with some sauce.
Add last tortilla pour sauce over it.
Top with 1/2 cup (125 ml) grated cheese.
Cover and place in microwave on high heat for 4 to 5 minutes.
Top with shredded lettuce and chopped tomotoes, olives and sour cream.
Eat and enjoy.

This makes 2 serving each 3 tortillas each.
I like this recipe because it is quick and easy and uses up left over roast or taco meat. I like the pork in the green chile enchilada sauce and the beef in the red. You can mix the meat in the sauce if you like--I do it both ways. Many times I make my own green enchilada sauce.
Taco Casserole
I use this recipe when we have left over taco meat. Its fast and easy and the kids love it.
1 package taco seasoning
1 (11 ounce) bag taco chips or nacho cheese flavor Doritos
1 (8 ounce) can cream of chicken soup
1 (8 ounce) can cream of mushroom soup
1 (8 ounce) can rotel
1 1/2 lbs ground beef
1/2 minced onion
4-5 slices American cheese
Brown ground beef; drain.
Heat soups and rotel in sauce pan.
Place Doritos in bottom of 9*13 pan sprinkle meat over chips.
Distribute onion over meat, pour soup over mixture.
Cover with slices of cheese.
Bake in 400 degree oven until cheese is melted.

do you like taco salads or spicy sloppy joe or you could use sour cream and all the other topping and put it in a baked potato. fry some flour tortias and lettuce and all other toppings and wala you have a unique experience
