My family loves Texas Hash. It is ground beef, green peppers, onions, canned tomatoes, rice and spices such as salt, pepper, cayenne pepper, chili powder. It sounds spicy but it really isn't. All depends on how hot you like your food. Just brown beef and cook peppers and onions. Mix all together with rice, tomatoes and some water(I use about a can's worth). Bake in oven (350) for about 45 min or until rice absorbs most of the liquid. I serve with a salad and corn bread. Hmm Hmm.

There are a ton of ideas here! Shepard's pie is my husband favorite.. I make it in an actual pie shell (this makes it easier to serve and gives it a nice buttery taste) A couple other GREAT things to make are stuffed peppers and stuffed cabbage. There are little different from your everyday. I have great recipes from by grandmother (awesome) write if you'd like them! Ooh and also Swedish meatballs! We have a Mexican night from time to time too! You make one BIG batch of seasoned hamburger meat (like taco seasoning) and set out a bunch of options, fixings for tacos, burritos, quesadillas and nachos (like lettuce, tomato, onions, black beans, sour cream, cheese),my kids love it!
I also make a mock beef stroking. It's hamburger, dry onion soup mix and cream of mushroom soup and serve it over buttered egg noodles with a veggie or salad. It takes about 20 Min's to make, tastes GREAT and it's VERY inexpensive!
Hope this helps.. I am sure I could some up with SO much more, but here's a start!

I love making chili - just made a batch last night. You can freeze it in meal-sized containers and then just thaw and microwave. It's so nice to have on hand for quick lunches and emergency dinners.

Another terrific recipe I found a LONG time ago is for "Meat and Potatoes Casserole". Now THERE'S comfort food. (* "or so" means I have a heavy hand - now there's an understatement)

Easy Beef and Potato Casserole

Prep time: 20 mins.
Cooking time: 1 hr. 15 mins.

1 lb. (or so) lean ground beef (or other ground meat)
1 tbsp. Oil
½ c. (or so) finely chopped onion
½ c. (or so) finely chopped celery (w/ leaves)
1 can condensed cream of mushroom soup
1 can (or so) stems & pieces mushrooms, drained (chopped if necessary - some of them are BIG)
1 c. frozen mixed vegetables, thawed
½ c. milk
1 tsp Worcestershire sauce (optional)
1 tsp pepper
1 1/4 tsp salt
4 large baking potatoes (thinly sliced - I use the food processor)

Break up ground beef. Saute in large skillet over medium heat in oil until browned, 8 to 10 mins. Add onion, celery and celery leaves and saute 5 minutes. Stir in mushroom soup, vegetables, mushrooms, milk, Worcestershire sauce, pepper and 1/4 tsp of the salt.

Place half of the potatoes in a greased 2½ (or larger) quart baking dish. Sprinkle with ½ tsp salt. Spoon half of the ground meat mixture over potatoes. Cover with remaining potatoes and the rest of the salt. Layer the other half of the meat mixture over all. Cover and bake in 400-degree oven for 1 hour or until potatoes are tender when pierced with a fork.

Pinwheels. I loved them as a kid, and I'm trying my best to recollect the recipe right now....here goes.....

1/3 cup milk
1 cup Bisquick
4 T. ketchup
4 T. mustard
1 T. butter
1 lb. ground burger

Mix together milk and Bisquick, roll out flat like a pizza crust over a floured surface. Mix ketchup, butter, and mustard together in a small bowl, enough to cover surface of dough. Spread it out over dough, then crumble burger over it. Roll into a cylinder, and cut into 1" thick slices. Put these face up on greased cookie sheet, bake for 15-25 minutes in 400 degree oven.

You can make a real Italian Bolognese sauce for pasta:

ground beef
red onion
fresh italian herbs (oregano, basil, thyme)
olive oil
Fresh tomatoes...

that is all just experiment with the ingedients.. (oh you have to fry the meat first and stirr it with a fork while frying....

take ground beef, mix one whole raw egg in it. then cook it and add raisins, a tablespoon of garlic and onion powder, green olives. cook until done and serve over white rice.

also for the hamburger mix, also add 1 cup of beer. yes beer. it makes it much juicer and tastes great.
