Ok, just bought 2 pounds of the roasted awesomeness known as Hatch green chilis. Now I need some recipes to make something good for dinner. A green chili rice would be great, perhaps some enchiladas...send me some tasty ideas!

Green Chili Casserole
3-4 green chilis
one can of cream of mushroom soup
lb. of hamburger meat
1/2 sm. onion
Bag of shredded cheddar cheese
Pre-heat oven to 350 degrees.
Cook hb meat, drain. Get a square baking pan (glass works best), mix together cream of mushroom, hb meat, onion, and chilis in baking dish, top with shredded cheese.
Bake for 20 minutes (or until cheese is melted good)
Serve and enjoy!

Awww, were you not able to get them raw? This weekend is Relleno-Fest at my house - my housemate loves the mild Hatch chiles (they're the only "hot" peppers that don't taste bitter to her), so we buy a bunch of 'em raw, stuff 'em with all sorts of things, bake 'em, and shove 'em in Foodsaver bags to nosh on all year.

you can get several recipes at the Hatch, NM website.

they also have cookbooks you can but specifically for green chile's. I get them all the time (I'm in Tucson ) they freeze very well. enjoy !
