you absolutely can. however, keep in mind that when you use dumbells for an exercise like chest presses or rows, you usually can't lift as much as if you used a barbell because dumbells require more coordination and control. if max muscle gain is your goal, you should definitely mix in barbells if you can. you'll be able to lift a little heavier which will stimulate the muscles to grow even more. at the same time, don't think that dumbells are a waste of time if muscle growth is your main goal. lifting heavy weights without injuring yourself requires strong stabilizer muscles. a good way to strengthen stabilizers is to use dumbells (or cables) which require more stabilization and coordination.

Yes, you can do many of the same exercises with just dumbbells that you could do with a barbell, or on weight machines. Just make sure that your form is correct.
