Obviously it depends on your budget and personal taste but here is a selection of my top honeymoon hotels:
Banyan Tree Phuket - top of the range with pool villas
Andaman White Beach - secluded with great beach
Chedi Phuket - good beach, characterful
Mom Tri's Villa Royale - small, boutique
Mangosteen Resort and Spa - on top of hill with fantastic sea views

go to Amari Coral beach resort, located right on top of a hill with its own jetty and spa , and good continental food,it provides sea facing rooms with balconies to honeymooners, and complimentary dishes and juices,
one of the best breakfast(complimentary) and dining experiences with performers flown in from las Vegas,
it overlooks Patong beach the best one in Phuket , where you can paragliding, use water scooter and also sight Star Cruise(Virgo ) or embark upon it too from there to Singapore, but i will suggest you to stay for more than 3 days in phuket, do not include a Thursday in your itinerary, watch Fantasea and walk in Bangla Road in the evening and enjoy the sights, the gem factory is a waste, and eat as much as fruits(good) and got o the top of the hill to have a bird eye view of phuket. do not venture to the beach at night just stick to patong road, the tuk tuk takes 100 Bahts for a trip to Amari which is not reasonable, try going to the beach early int he morning and rest in afternoon and stroll and eat around in the evening.
remember when in Phuket always bargain everywhere parasail, stuff shopping, they loot you and charge exorbitantly

We were recommended the Katathani hotel - it looks lovely & isn't in the busy town centre apparently - just like 10 minute ride away so your not in the hustle & bustle of it all. Haven't been there myself yet though but am hoping to soon!
