I am cofused when it comes to formal letter/email writing as to how to end it. When does one use 'yours sincerely', 'regards' and 'many thanks'? Are there any others that I have left out? If so, when do you use those?

I was referring to when to use those specific endings. I need to write a polite email asking for help with an application form to somebody I don't know.

Your sicerely and yours faithfully is used for formal letters, Kind regard is used for semi formal, Many thanks is not a good way to to end a letter, perhaps you can use it within the letter then use one of the others to end the letter.
With emails you can still use as above if to an important company, or just keep it simple for all others as kind regards, or Thanks......

emails are not formal. With letters, it depends on how well you know the person, I think. If it is a business letter, you could say, "sincerely yours". If you are writing a letter to a personal business situation or concern, you could say "many thanks", if you are asking for a solution to a problem. Actually you could also say, regards, but I would save it for someone
you know, not a best friend, but just an acquaintance. I always say, "love you" to people I know real well, best friends, relatives, children and such.

For letter writing, you have to use all the formal addressing and ending. But for emails you don't have to be formal. You can write as you please, and no strict rules either.

i have no idea. to me those types of formalities are a leftover from imperial attempts to categorize people and set universalized standards to the planet as to how to adress one another!
