I have the perfect recipie for you! It's very simple and also very cheap, best of all you can adapt it to suit your own taste.
Tattie Pot:
You need a casserole dish with a lid.
Several Potatos
1 Onion
1 Tin Corned Beef.
(I add a few carrots, but you could leave these out or add more veg as desired)
Oxo cubes / Gravy Salt
Peel and slice potatos quite thinly.
Ditto with carrots / veg.
Chop / Dice onion.
Slice corned beef (cool it in the fridge first to make slicing easier)
Place alternate layers in casserole dish;
Potato
Onion
Corned beef
Carrot / Veg
Potato
Onion...........
Add layers until dish is full, make stock with oxo (about 1 pint) and pour over.
Chuck in oven at 200C for about 2 - 2.5 hours. Take the top off toward the end to 'brown off'.
I like to top each serving with grated cheese and grill until melted.
Salt & pepper to taste.
Bloody lovely!

Black pudding. Sliced, lightly fried in a bit of butter. Remove pudding from pan. Stir some double cream into the left-over juices and bits; add some good mustard (ideally the whole grain sort) and stir in, then some lemon juice. Serve alongside the black pudding (keep the pudding warm when you're doing the cream thing), boiled spuds, and veg.

How about a lamb roast - with roasties and whatever veg he likes. My man is the same and is not at all adventurous. When I do a simple meal like the above and do it well - a bit special with some herbs or whatever he thinks he is in heaven. ~Give him gourmet and he remains polite but very cautious!
