You need to be more specific. Tell us what is important to you - if you hate hot weather, if you need public transport, if you want to be near the beach.... things like that are all so important when deciding where to live.
I would stick to one of the state capitals. I live in Brisbane but I think Melbourne would be best suited for a European.
Maybe you should come out for a holiday and spend some time researching.

While you get used to be being in Australia, you should probably best to stick to Sydney or Melbourne so that it's not too much of a culture shock. They are the biggest and the most cosmopolitan cities in Oz. The other big cities (like Perth, Brisbane, Adelaide etc) are smaller and much more provincial.
None of the cities are as big as somewhere like Paris so if you're used to that then you'll find Australian cities quite small. Not always a bad thing but you'll find it difficult when it comes to things like finding good restaurants and finding a lot of cultural things like museums - all are available in the big cities but not in the quantities that they exist in European cities.
