I used to buy this really great cheese, but I forgot the name of it. it is harder than Cheddar, but not as firm as Parmesan. It is off-white or light yellow in color, and it tastes sort of like Jack, and it has a black rind. I believe the name of the cheese starts with an 'R', but I can't be certain. If you have any ideas of what the name of this cheese could be, please let me know.

Thank you so much, Katy! It is Rembrandt! I didn't even know it was a type of Gouda. I'm such a lop! Now when I look for it, I will know what I'm looking for. :)

Was it Gouda? or Asiago? or Havarti? or Roquefort?

It could be Tête de Moine.
It is a very mild washed rind cheese. It comes in a tall cylinder. One slab was cut off the top so that it was a circle with a rind all around. The cheese is yellow, semi-hard, and has a dark rind that looks like tree bark and tastes like molded dog food. We loved this cheese. It stunk a little bit, but it sure did taste good. It was milder than the Chimay we had had. I tasted some later that was much more pungent, though. It was aromatic with spicy, meaty flavors.

Or it could be Tilsit. It is dark cream-colored and very yellow, and is aged for 7 years and has taken on less of a pungent, soft washed-rind flavor and texture, and more of a Cheddar personality. It reminds me of a cross between a sharp, sticky, nutty, aged Cheddar and a Parmigiano-Reggiano. This is an excellent cheese.

If it isn't any of these, I'm stumped and you'll have to look it up!

Maybe it's Tomme de Savoie or SellesSurCher; both a French cheeses. Has the qualities that you mentioned and very tasty (certainly worth remembering). Some of the cheeses that people are suggesting that start with an "R" are too hard, too soft or not at all taste you describe. Have fun with your hunt and maybe have a cheese tasting with your friends!

The only cheese I can think of the has a black rind is gouda.

Could it be Muenster? Maybe not..I think that has a red rind..but a lot of Cheddars have a black rind.

It sounds like Romano cheese or it could also be roquefort. It a cheese made out of goat cheese that is semi hard.

i used to work in a deli and i never saw one with a black rind...i wish i did, i would know the name but sorry i have never heard of that. good luck.
