If I economize and buy the large container of crumbled gorgonzola from Costco, how long will it keep in my fridge after I open the container?

Confession: it's lasted through 2 months worth of salad now, and even though I haven't hit the "sell by" date, I'm starting to wonder ....

I'd hate to see any good gorgonzola go to waste! I freeze my excess BC, and just crumble off some as I need it. I also buy the Amish BC in a tub w/ snap on lid (Sam's) and store it int eh freezer door. Just get a spoon adn dig out the crumbles I need for salad or a recipe. You may try that.

Cheese has a long shelf life. It can last many weeks and if not opened it can last months. Since it is opened just look at it, if it has mold on the outside of it just scrape or slice it off, the rest of it is fine!

Cheese has an amazingly long shelf life. If it molds the mold can be cut away and the cheese will be fine.

As a chef, I look for abnormalities (dryness, abnormal mold spores), especially as the exp date nears. Got a kickass pasta recipe that'll use it up if you want...

all depends on how you are storing it.. is the package sealed? or do you have it in tupperware.?? it should last a good while.. check the package on how to store it and follow those and it should last til the sell by date easily!

well i mean its already moldy because thats what the green and blue part is...so as long as you finish it it should be fine..
