ok. Start off with a french salad: mix greens and top it with slightly tossed mushrooms (the yellow ones)/finely sliced onions and parsley.
For entree, use a rib tip garnished in salt, pepper, olive oil and green onions. Cook in open pan. 8 mins on each side.

I hear ya. No pasta is a tough hurdle for you when shopping and meal planning. Will your husband eat salad? My 6-year-old son will eat any kind of fruit; getting him to eat vegetables is another question. However, he will eat a green salad tossed with either shrimp, chicken or sliced cold steak, provided I go easy on the dressing and there are grape tomatoes (his favorite) in it. I know there are a million ways to make shrimp salad out there, but here's mine--doesn't use mayo (we don't like it) and therefore healthier too.
--Hard-boil 3 eggs, or 1 per person. Peel and set aside.
--Wash and dry well (or give yourself a break and go for the bagged stuff) some baby salad greens and some Bibb lettuce too if you can find it--however much you think you need. Add a good big handful washed and roughly chopped fresh dill. Save a sprig or two for garnish
--Thinly slice 2-3 green onions (white and green parts) and add them in. Peel and thinly slice 1/2 a cucumber and add that too.
--In a small jar with a lid, shake together the juice of 1/2 a lemon with 1/2 teaspoon dry mustard (but a little prepared Dijon will work) and salt and pepper to taste. Then add about 1/2 cup good extra-virgin olive oil and shake again.
--You'll need about 1/2 a pound of cooked tiny shrimp. If they've been frozen, they may be giving off some water and need a pat-down with paper towels. Toss them with a very little bit of dressing. Then drizzle enough dressing over the greens to moisten them lightly and toss. Divide greens onto plates. Divide shrimp over the top of the greens. Arrange wedges of hard-boiled egg on the sides and finish with a few halved grape or cherry tomatoes and a dill sprig or two.
Garlic bread (or at least some hot bread with butter) is essential!

Easy Enchiladas
Sauce:
2 cans tomato sauce
bottle of your favorite salsa
teaspoon of garlic powder
tablespoon each of oregano and basil
teaspoon of chili powder
dip corn tortillas in the sauce and roll up with cooked shredded chicken and shredded "Mexican" flavored cheese and place in 9"X12" pan. Rolled seam side down.
Pour rest of sauce over the top and top with another cup of the cheese.
Bake at 350 for 40 minutes. Totally YUMMY. My family begs for this. I've also done half the pan in "veggie" style, putting sauteed onions, green peppers, mushrooms and black olives with the cheese instead of the chicken if I have vegetarian eaters at the house.

try grilled chicken with garlic mash potatoes and asparagus! I'm not a veggie lover but asparagus is really good steamed with some butter or no butter maybe some seasoning and walla!

Well, you can try fried meat with much more vegetables.
Remeber eat fruit before any meals. I tried while in OK. That was being busy.

ok. stake broiled in the oven with just salt and peper. until you think there done mabey 15 minutes to 30. mashed potatos with butter,garlic,peper, salt and sour cream. and green beans from a can with butter salt and peper. that's what were having.
