I could only cook about 2 lbs. out of the 5 lbs.

Honestly, I do not think it would be okay...Now, if you were cooking it all thoroughly and then wanted to freeze it to re-heat later...that is a different story. Just remember, it is better to be safe than sorry! Food poisoning is no fun...believe me, I know 1st hand! YIKES. Next time u r @ the store...grab some freezer bags. As soon as you bring (any) meat home...break it down into individual servings and then toss it in the freezer! No waste. ;)

The previous answers aren't very helpful, are they? The reason for not refreezing chicken is that it is particularly good as a bacterial growth medium. Chicken is very often contaminated with salmonella and other nasty bacteria that, if given just the slightest chance, will rapidly reproduce and thoroughly contaminate your chicken. How rapidly? Within a couple hours, a cooked chicken breast can go from perfectly safe to eat to containing enough bacteria to give you a nasty case of food poisoning. That's why your health department is so strict with restaurants - it's so easy for cooked chicken stored improperly or left sitting in a serving tray to become contaminated and sicken people that being caught mishandling chicken can cost the restaurant its license. So - either buy your chicken fresh (not frozen) and divvy it up into manageable packages (that's what I do) and freeze those packages you're not gonna use right away...or find a market that'll sell it to ya in smaller quantities.
Beleve me, you don't want food poisoning - it happened to my father once, and jeez, was the old man sick! We did not get along well, but that's one time I really felt sorry for him...

Once meat has thawed it is a bad idea to refreese it. It will change the taste.

Once it's thawed it has to be cooked or tossed out.

You are not suppose to, but I do. As long as you cook until it is done inside, I don't think it will hurt you. Please don't undercook it, it will make you sick.
