You can leave zuchinni out but don't leave it out too long. You can pretty much leave any fresh veggie out since it grows in the hot sun and doesn't spoil, as long as you use it in time, and has not been refrigerated prior.

You can leave it out but once you cut it you will have to refridgerate it. You can also keep it in the frige prior to using it, it will keep longer.

Zucchini doesn't NEED to be refrigerated, but like most other vegetables it stays fresh (no rot) longer in a refrigerator.
