Great question. This is something I have been battling with for a long time. I want to be healthy, and don't want to eat excess carbs and fats, and I want it to be filling as I usually work like a complete maniac until lunch.
I came across this recipe, The Zip-Lock omelet recipe, and told my fiancee about it. He had heard about it, but, he had not tried it as he was afraid it might explode or something,and he didn't want to deal with the mess.
Explode???? Big mess I scoffed???? In a pot????
He had heard it was made in a microwave.
Yesterday, I finally tried out the Zip-Lock omelet recipe, and the final result was soooooo yummy. I detest dry omelets, but the way these are made, the steam has no where to go, so you are left with a very moist omelet.
First thing you do is make sure you have a quart size freezer zip-lock bag, two eggs, and stuff to go into your omelet...Oh, and a pot big enough to boil your freezer bag is a necessity too.
Assemble all the stuff you want in your omelet.
Fill your pot with water, and let it start boiling.
Open the freezer bag, crack the two eggs into the bag, shake it up a bit.
Add the ingredients, and shake them up too.
Make sure all the air is out of the bag
When the water is boiling, put the bag into it, and allow it to cook for 13 minutes. Warning, do not the Freezer Bag to droop down and rest on the\ outside edge of the pot. Keep all the bag in the water..it will be fine there. Outside the pot, the bag will melt and smell bad :(
After 13 minutes, take the bag out of the water, open the bag, and roll the omelet out onto a plate.
That easy. That quick. That fool proof.
You can also assemble the bags, and freeze them until you need them. Cooking time may vary then....I need to experiment :)

Edit- I rewrote this, because I am sending this recipe to family and friends. Because I did rewrite the recipe into my own words, I am changing my answer here, from the cut and paste recipe I had before, to my own words.
Also, I did a search on egg recipes here in Yahoo Answers, and found a question quite similiar to this one, but the asker is diabetic and cannot have sugar that early in the morning. There are tons of good ideas there. I'll add that link here as well.

They had these milk and cereal bar things a couple years back, like 4-5 years ago. The rice krispies kind was pretty good =P
Otherwise I'd just grab a Hot/Lean Pocket.

I grab a can of Target ultra weight loss shake. I like the Target vanilla better than Slim Fast vanilla. Also Slim Fast is gone to Optima which has less carbs. The Target brand still has lots of carbs to keep you going until lunch.

Whatever is in the pantry. Cookies, poptarts, bagel, snickers, I'm terrible with breakfast. It always makes me end up eating a big salad for lunch, which isn't the worst thing.

Every Sunday I hard boil 5 eggs. That way all week I can grab a hard boiled egg for breakfast - no sugar, just protein. Good for you.

Depends on what I have in the cabinet. Usually nothing. IF I have food in the house I will grab a Kolache and nuke it, or a granola bar.

Fruit: banana, blueberries, cherries, granola bar, apples, oranges, or if I find money between the cushions, for 2 egg McMuffin sausage with egg at Mickey D's.

I dump about a bowl's worth of my favorite dry cereal (either Cheerios, Chex or mini shredded wheat) into a plastic baggie and dig in while I am getting ready.

Go to a nearby starbucks, dunkin donuts, or bagel shop. Grab something thats not messy and ave plenty of napkins with you.
