There's several reasons, the most obvious being earthquakes and volcanoes but there are others...
The surface of the earth isn't solid, it's made up of a series of huge chucks of land called tectonic plates. Some of these are pulling apart from each other and are effectively tearing the earth apart - Africa's Rift Valley is one such example of a tear hundreds of miles long. In other places these plates are crashing into each other and forcing the land upwards - many mountain ranges are created this way (the Himalayas, Andes, Alps etc). This instability of the land can cause mountains to crumble.
Weather can have a dramatic effect over a period of time. The wind and rain can erode hillsides and cause crumbling. In places where the terrain consists of different rocks the erosion occurs at different rates with some rocks eroding quicker than others - this can lead to some fascinating geological formations (e.g. Badlands and Colorado).
In colder places the weather can induce a freeze-thaw cycle. Moisture gets into cracks in the rocks and when it freezes it expands and the crack gets bigger. This process is repeated many times until the rock splits into two.
