Rule of thumb I use is 7lbs pressure for stouts and porters, everything else gets 12lbs...but it's really just personal preference.

When tapping off, I hold the glass at a 45 degree angle, letting the stream hit about halfway down the side of the glass. When the glass fills up to that spot, tilt the glass back to 90 degrees, or fully upright, then let the stream hit dead center.
This should give you the perfect amount of foam.

If you're trying to recreate specialty pours like Guinness, you need the right equipment...like a european faucet tap, which has an aerator disc in it...like a flat washers with a couple tiny holes in it...when the beer is forced through, it froths up. They also use a nitrogen mixture instead of standard CO2, which gives it a smoother, creamier feel.

Open the tap fully while pouring.

If you're getting foamy pours (from home kegerator) start with the basics. Find out the ideal pressure and tempurature for the kind of beer and try to match that as closely as possible.

Try to keep the keg-temp as consistent and close to the ideal temp as possible.

Tilt the cup, mug , or stein til u get the perfect amount, not to much head or should I say foam on top.

You should have a frosty mu colder than the beer and this will give you a better Glass also a pretty girl by your side doesn't hurt.
