Many reasons. Few of them are :
1) Dark walls reveal less dirt in the dark
2) Maybe it is a theme of the restaurant like Dark, Halloween, etc
3) The Owner and Interior decorator chose the color
4) The decorator/owner lack imagination, and wanted to go cheap on their investment.....
Resting the case for now.... !! :) Have a great day, enjoy the food in the restaurant, don't question whats in the kitchen, or what color is the wall. :)

Maybe YOU'RE going to the wrong restaurant, pal. The ones I go to have brightly painted walls. Not all restaurants have dark walls.

Ambiance. If the walls are white and bright,you tend to feel more tense,but with dark walls,you feel more relaxed and comfortable - meaning that you will be enticed to stay longer=spend more $$

its dark to gave that calm,relaxing stetting which ease your mind and let you enjoy your meal .
them it could be so that you don't see the ugliness of the blind date hahaha.
