Whip up your egg with a wire wisk. Add salt and pepper and a teaspoon of milk or half-half. If you want them fluffy, add 1/4 tsp baking soda before cooking.
When cooking, start with a heated pan, medium-hot. Add butter. Add the eggs. When you see them start to bubble, lift them gently with a spatula so that the runny, uncooked egg can cook in the pan; don't stir too much. Just keep on lifting and turning the egg, maybe flipping it before it starts to brown. It should be done in less than a minute from then.
Here's a scrambled egg and scallion recipe. If you substituted pepper for scallion, would this work?

3 tablespoons unsalted butter
2/3 cup minced scallions
8 large eggs

In a medium non-stick skillet cook the scallions in the butter over moderate heat, stirring occasionally, until soft. In a bowl whisk together the eggs, cream cheese and salt and pepper. Pour the mixture into the skillet and cook over moderately low heat, stirring, or until cooked. Transfer to a serving plate and sprinkle with the chives or scallions.

You can add almost anything to eggs.
For spicy, to your taste, add two or three teaspoons of whatever salsa you have in the fridge, and scramble as usual.
For something a bit different, try a quarter teaspoon of vanilla and a fair amount of cinnamon. I know it sounds strange, but try it.
You can add some crumbled bacon and some cheddar cheese.
McCormick makes a pepper blend called "Hot Shot." Add a bunch of this and just a bit of salt.
Try adding a few tablespoons of Barbecue sauce.
Just experiment. Try anything.

Sausage, Egg, and Cheese Scramble
Serves 4
4 (2.5 oz link) Pork Chorizo Sausage, casings removed
4 Large Eggs
3/4 Cup 2% Milk
3/4 Cup Sharp Cheddar Cheese, shredded
Instructions:
Place sausage in a large, deep skillet. Cook over medium high heat until evenly brown. Remove from pan, drain and chop into bite-size pieces; set aside.
While sausage is cooking, beat eggs and milk together. Pour eggs into skillet used to cook the sausage. Add cheese and cook until eggs are set. Stir in sausage and serve warm.

SCRAMBLED EGGS DELUXE
INGREDIENTS:
8 large eggs
1/4 cup milk
1/2 teaspoon salt
1/8 teaspoon pepper
2 tablespoons butter
1 large tomato, chopped
1 tablespoon thinly sliced green onion tops
PREPARATION:
In a mixing bowl, beat eggs, milk, salt, and pepper together until well blended. Melt butter in skillet over medium-low heat until hot; pour in egg mixture. Reduce heat. As mixture begins to set on bottom and sides of skillet, lift and fold over with spatula.
Cook until eggs are almost set; fold in tomato and green onion. Heat scrambled eggs through; serve immediately.
MEXICAN SCRAMBLED EGGS
INGREDIENTS:
3 tablespoons vegetable oil
4 corn tortillas, cut in thin strips
2 tablespoons butter
1/2 cup chopped tomato
1/4 cup finely chopped onion
1 small green chile, seeded and chopped
4 eggs, beaten until frothy
salt, to taste
PREPARATION:
Heat 3 tablespoons of vegetable oil and sauté the tortilla strips. Drain on paper towels or brown paper.
Heat butter in skillet; sauté the chopped tomato, onion and green chile for about 1 minute.
Put tortilla strips back into the skillet.
Pour beaten eggs into the skillet over other ingredients and cook, stirring often, until mixture sets. Sprinkle with salt, to taste.

I saute some minced onion in a tiny bit of butter, then pour beaten egg on that, then shredded cheese. Scramble as usual and season with salt and pepper.
You can also add herbs like tarragon, parsley, or chives.

I dice some onions and saute them in butter. While they are cooking I beat eggs with a little milk. When the onions are clear, I add the eggs. When they are done, I plate them and put salsa and nacho cheese on them. You can sprinkle some chopped green onions on too if you want or crumbled bacon.

I don't really follow a recipie, but heres how i make them, scramble with pepper and a little milk then cook, get a can of Ro-Tel tomatoes with green chile and drain well, put the tomatoes over the top and there ya go.

I love eggs, eat them all the time. One way is like an omelette, onion, green pepper, ham, when done lay swiss cheese on top.
the other way is take left over spaghetti warm in the pan w/ little olive oil. scramble eggs around it, top with pepper & grated cheese. try it...before you say sounds gross

My boyfriend (who went to culinary school) says a bit of water added makes them fluffier.
I use grated cheddar cheese, or the mexican blend. I love to add that plus some ham (not deli, but baked ham) chunks. Add some toast, a few tater tots, and some orange juice - that's my favorite breakfast!

This is what I like to do:
Take five eggs, whip them into a puree, put pepper, chopped up tomatoes chopped up onions, and chopped jalapenos and shredded cheese and mix them all together. Pour it in a frying pan, wait till eggs are solid and you got yourself a great omelet.
