...make muffins, store them in the freezer, and then thaw and eat them knowing that the eggs/milk in the muffins will have expired already?

I freeze cakes all the time and they have milk and eggs so I guess the answer is yes you can freeze muffins becasue they are cooked and processed

Once you cook the muffins everything that had an expiration date is ok. It's only if you haven't used the milk or eggs before the expiration date!

Yes, frozen foods can pretty much last a very long time. (the expiration date does not really matter).

My mom had a friend that would pump her breast milk and freeze it. The doctor recommended this to her and said it would last for a long-time like that...

Yes if they are frozen they are fine to take out one at a time, remember they were cooked which would kill the bacteria.

yes it's totally okay!
once you cook them, all the bacteria has been killed. then once they are stored into the freezer, they are kept frozen so that no other bacteria can grow on them.

Yes it is ok. As long as you don't freeze them for over 6 months, it is ok to freeze them.
