For example:
I work in a restaurant and some servers say
"How are we doing this evening?"
"Are we ready to order?"
"Do we need any drinks?"

Why do they do this?

I think it's just a way of trying to establish rapport with the customers. You must know more than anybody that servers in the US live off their tips...I mean what can you do on like 4 bucks an hour if you don't make tips??? So by saying "Do we need any drinks" the server is probably just trying to decrease the distance between the server and the customer in order to increase the tips. But unless you're working in a restaurant in the good ole' Midwest, I wouldn't use "we" like that. Most people I know think it's annoying.

The proper way to ask would be "How are YOU this evening?"
"Are YOU ready to order?"
"Would YOU like any drinks?"

Don't know why they do this. If they were to ask me How are we doing this evening? I would respond, well I just go here, I can't tell you how you're doing but will let you know at the end of the meal.

Maybe they want to help the person feel like they are a part of a group, put them more at ease? I don't know... It's like when you take an exercise class and they say, "Now take THAT knee," when they should be saying, "Now take YOUR knee." That always irritates me. Good question though.

I don't know how that came about but I do hear it quite often. But like you mentionned it's mostly used in the service industry, I find it annoying personally.
