I've done it, but I don't consider myself particularly good at it. Just so you know.
First, identify the things that you like the most about that person, both big and small things, how you feel both when you are together and when you are apart, how having her in your life has changed you. Try to make connections with other things that you like, for example connect blonde hair to the rays of the sun that warm your heart. Don't concentrate just on the physical, though. If she's interested in, say, philosophy or some field in science, try using some terms from there in a slightly different sense or use them to make connections. The poem doesn't have to rhyme, so don't worry too much about that. Good luck!

Well, I usually like rhyming poems. But if you are going to write one that rhymes, here are some tips:
1. Don't rhyme the same words more than once. Twice is ok, but even that is pushing it.
2. Rhyme words with more than one syllable. Cat/bat, Big/dig, Look/book are all boring. If you *are* going to rhyme small words, make sure they aren't as common as the previously mentioned words. Try more interesting words, like Pained/strained (obviously not for a love poem, but you get the point).
3. Make sure the rhyme scheme flows. Use the same rhyme scheme for all of your stanzas. Don't use ABAB for your first one, then AABB for your second, then ABCB for your third. It usually doesn't sound write.
4. This tip is for all poems. Make sure that the ending of the poem actually sounds like an ending. Don't make the last sentence sound like the beginning of a new poem.
And like everyone is saying, good poetry comes from the heart. Good luck, and I hope it comes out really well. ^_^

For one it has to come from the heart. Take those feelings and look at what else in life seems similar and then use the combination to write something with depth and meaning.

Just write what' in your heart, and it does not have to rhyme...sometimes, the rhyming sounds too hokey.
