Passion Fruit Margaritas

2 ounces tequila
1 ounce orange-flavored liqueur
1 ounce passion fruit puree
1 tablespoon lime juice
1 ounce simple syrup
1 cup ice

In a blender, combine the tequila, orange liqueur, passion fruit puree, lime juice, and simple syrup. Add the ice and blend.

Passion Fruit Sangria

2 bottles dry white wine
3/4 cup brandy
1/2 cup Triple Sec
3/4 cup simple syrup (equal amounts sugar and water heated until sugar dissolves and cooled)
3/4 cup passion fruit puree
2 cups fresh orange juice
3 oranges, sliced into thin rounds
3 green apples, cored and sliced thinly
2 lemons, sliced into thin rounds
1 cup blackberries, washed and sliced in 1/2

Combine all ingredients in a large pitcher. Cover and refrigerate for 2 hours or up to 2 days. Serve over ice with pieces of the fruit.

1/4 cup frozen raspberries
1 tablespoon passion fruit juice
1 tablespoon lime juice
4 ounces yogurt
1 tablespoon honey

Place all the ingredients in a blender and blend until smooth.

Baked Chicken and Bananas with Parsnip and Coriander Quinoa
with a Tangy Passionfruit Glaze

2 servings
2chicken breasts
2 Tbspolive oil
ground pepper
l/2 cupquinoa
1large parsnip (cooked in microwave or boiled)
1/2 Tbspchopped coriander
1/2 tspsalt
1 Tbspbutter
3passionfruit
1 Tbspgrated root ginger
3 Tbspcastor sugar
1 Tbspwhite wine vinegar
1/2 cupwarm water
1large banana
Method
Preheat the oven to 2000C.
Remove skin from chicken. Rub chicken with half the oil and ground pepper.
Grill or bake for approximately 7 minutes each side. In a medium-sized saucepan bring to the boil 1 cup of water and quinoa.
Simmer for about 20 minutes or until cooked.
In a food processor, process parsnip and coriander, salt and butter. Stir through quinoa, put aside
reheat just before serving. Remove pulp from the passionfruit. Mix all the glaze ingredients together in a small saucepan. Bring to the boil and simmer for 5 minutes.
Slice the banana lengthwise. Heat the remaining oil in a frying pan, add banana and cook quickly on both sides until golden brown.
To serve: Mould the heated quinoa in a 1/4 cup capacity measure and turn out on to plate. Slice chicken length wise to form thin strips, place on plate, alternating with the banana slices.
Spoon passionfruit glaze over chicken and bananas. Garnish with a sprig of parsley.

Ah, passion fruit! The fruit of passion! It's wonderful if you mix it with other mild fruits like mango, papaya, banana's etc. Passion fruit is great but very tart and needs sweetened and diluted a bit. Try a frozen passion fruit mix and add sum nice rum to it.

SANGRIA
Ingredients:
3 cups pineapple juice
1 cup white grape juice
1 cup passion fruit juice
1/4 cup fresh lime juice
1 bottle sweet white wine
12 ounces ginger ale


Directions:

Combine first 5 ingredients in a large pitcher; chill. Add ginger ale just before serving; stir gently

PASSION FRUIT SOUFFLE
Ingredients:
1 tablespoon unsalted butter -- softened
1/2 cup sugar
2 egg yolks
3 egg whites
2/3 cup passion fruit nectar
1/2 teaspoon cornstarch


Directions:

Position a rack in the lower third of oven, then preheat oven to 425F. Butter a 4-inch souffle dish, then dust with about 1 tablespoon sugar, shaking out any excess. Refrigerate souffle dish.

Whisk together egg yolks with 3 tablespoons sugar in a large bowl until mixture is pale yellow, then set aside.

Whisk egg whites until foamy in a nonreactive mixing bowl, sprinkle in 1 tablespoon sugar, and continue whisking until whites hold a soft peak. Add 2 tablespoons sugar and beat until whites are glossy and just stiff. (Egg whites whipped in an unlined copper bowl will achieve 1/3 more volume.)

Whisk 2 tablespoon passion fruit nectar into egg yolk mixture, then fold in 1/4 of the egg whites. Carefully fold in remaining egg whites until just incorporated (do not overfold). Pour into chilled souffle dish and smooth top with a spatula. Run the tip of your thumb around inner edge of the dish to make a rim. Bake souffle until browned on top, about 12 minutes.

Meanwhile, mix together remaining passion fruit nectar and remaining 1 tablespoon sugar in a small saucepan over medium heat until sugar dissolves, about 3 minutes. Dissolve cornstarch in 1 teaspoon water, then whisk into sauce until slightly thickened, about 1 minute.

Divide souffle between serving plates and spoon passion fruit sauce around each serving.
