At my restaurant we just make ganache, a very simple chocolate and cream sauce, with two ingredients (guess what they are!).
Put bittersweet chocolate chips in a small bowl, heat up some heavy cream until it almost boils. Pour the hot cream over the chocolate, until barely covered. Don't touch! Just let the bowl sit somewhere warm for several minutes, and then stir slowly until the chocolate melts into the cream. If the chips aren't melted all the way, throw it in the microwave for 20 seconds or so and stir. A little corn syrup makes the syrup a bit looser. and shinier. So good over icecream, or poured over a cake. Or strawberries. Or straight into your mouth when nobody's looking.
Anything more complicated will just taste less and less like chocolate. Sometimes the easiest method is also the best.

Chocolate Syrup
Homemade chocolate syrup is worth making from scratch. Enjoy!
Your Host, Brad
5 squares (5 oz.) baking chocolate
2 cups boiling water
1 3/4 cups sugar
1/4 cup light corn syrup
1/2 tsp salt
Melt chocolate over hot water; add boiling water and cook over direct low hear, stirring constantly until smooth and thick, about 2 minutes. Add sugar, corn syrup and salt, and then cook briskly for 3 or 4 minutes, stirring occasionally. Cool Pour into clean glass jar. Store in the refrigerator.
To use this syrup as flavoring for hot chocolate or cold chocolate milk, allow about 1 tablespoon to a cup of milk,. If used as a sauce on ice cream, stir in 1/4 cup butter while sauce is hot.
