i just picked a bushel of these tomatoes and my first recipe calls for 16 lbs.

A bushel of tomatoes weighs approximately 45 pounds. So you need almost 1/3 of your bushel to get approximately 16 pounds.

You can't go by number of tomatoes, as Roma tomatoes can vary greatly in size.

Have you got a bathroom scale...USE IT! You can always weigh yourself holding a large bowl, then begin putting the tomatoes in the bowl until you reach 16 lbs extra weight.
