I'm planning wheat bread, turkey or ham lunch meat, cheese, mayo, tomato and lettuce. Are there any of these that don't freeze well?

Definately don't freeze the mayonnaise, lettuce and tomato. The lettuce will defrost all wet and mangey. The tomato won't be particulary nice either. The cheese should be ok and the meats and bread will freeze perfectly well.

Don't freeze mayo - it separates and goes all oily. I wouldn't advise freezing lettuce or tomato either - they go all soggy and gross.. No idea about lunch meat.

i agree with the others on NOT freezing the mayo and veggies. you can do the veggies up ahead, just keep them in zip loc bags in the fridge
