HERE you go....this is a CROWD PLEASER! I've made it many times, and people go nuts for it..........delicious, filling, and inexpensive. It's Chicken terazinni, .........you can buy cheap cut of chicken, like the thighs or leg quarters.......It doesn't matter cuz it all gets shredded up and thrown in the mixture. I also should tell you that you can add more cheese, I like to add parmesan cheese. The beauty of this recipe is that it is very hard to mess up.........sometimes I add more chicken or mushrooms, skip the sour cream and use an extra can of cream of mushroom soup. It will work out any of these ways. I took this recipe from allrecipes.com.......the link is below...you can change the servings, or read the reviews from other people who've tried this recipe.
1 pound spaghetti, broken into pieces
2 (10.75 ounce) cans condensed cream of mushroom soup
1 cup sour cream
12 ounces shredded Cheddar cheese
6 cups shredded boiled chicken meat
1 pound sauteed mushrooms (sautee with an onion -optional)
2 cups reserved chicken broth (from when you boiled the chicken)
--------------------------------------------------------------------------------
DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C). Bring a large pot of salted water to a boil. Add uncooked spaghetti (broken into thirds) to the pot and cook for 8 to 10 minutes or until al dente. Drain and set aside.
In a large saucepan, heat soup over low heat. Add sour cream and shredded cheese (reserve some for topping) and stir together. Then add the cooked shredded chicken, mushrooms, and cooked spaghetti and stir all together. Add enough of the reserved broth to make it 'sloppy' and mix all together.
Pour mixture into a 9x13 inch baking dish. Sprinkle reserved shredded cheese on top and bake in the preheated oven for 25 to 35 minutes or until bubbly.
