It's called the thrill of the chase. You want what you can't have, and then, when you get it, you don't want it anymore. You get the rush from pursuing a woman, and then when she surrenders, the thrill is gone.

Nothing is wrong with you. Maybe you're just nervous for the feelings. When guy likes a girl it's natural. Some times the girl likes the guy back and won't show it for fear of scaring him off. But some girls are just open with their feelings and it scares the guys. I'd calm down and relax and tell her how you feel. Then with the "cat outa the bag" maybe you'll be more relaxed around her and start a great friendship and in time have gained a great girl friend or future wife. Go for it dude.

you either like the chase, or are afraid to get too close, i'm assuming the first.
Maybe you feel that the 'new' feeling in a relationship is interest and when the 'new' wears off you feel you've lost interest...
