Monterey Beef Casserole
1 pound ground beef
1/4 cup finely chopped onions
seasoned salt
2 cans (8 ounces each) tomato sauce
4 cups taco-flavored tortilla chips
2 cups shredded Monterey Jack cheese or Cheddar cheese
1 can (6 ounces) sliced black olives, drained
Cook ground beef in skillet until lightly browned, stirring to break up meat. Drain off excess fat. Add onion and tomato sauce and simmer 5 minutes. Season to taste with seasoned salt. Place 3 cups tortilla chips in 2-qt casserole. Sprinkle with half of cheese. Pour meat sauce over cheese, then sprinkle with remaining cheese. Garnish with remaining tortilla chips. Bake at 350° for 15 to 20 minutes. Top with olives before serving.
Serves 4 to 6.

Plan well for dinner tonight and you can take the next few nights off!
Brown 1 diced onion and 3 pounds of hamburger in a big sauce pan. Divide cooked beef into thirds.
Tonight, use 1 pound of browned hamburger, stir in a can of chili and pour over nacho cheese flavored doritos. Top with bagged grated cheese and serve with your best beer.
Tomorrow, pour a bottle of spaghetti sauce over your pound of hamburger. Boil some noodles and add a bagged pre-made salad. Red wine and candles make it special.
Finally, spread a layer of frozen tater tots on a baking pan. Top with layers of cream of mushroom soup, hamburger, some canned corn (drained), and a layer of grated cheese. Heat in a 400 degree oven until warm through (about an hour). Oreos and milk make a great desert!
Shopping list: 3 pounds hamburger, one onion, 1 bag nacho cheese dorito chips, 1 bottle spaghetti sauce, 1 can cream of mushroom soup, canned corn, package noodles, bagged salad, red wine, beer, 1 bag pre-grated cheese, oreos, milk, frozen tater tots

you can make sweet and sour meatballs for a change
you'll need ground pork or beef then mix with part pepper, salt, garlic salt (optional), pinch or sugar, minced celery, onions, carrot, cabbage (if desired), bell peppers, beaten egg and some cornstarch
mix well and scoop with a spoon the mixture, shape into balls
for the sauce, use catsup/tomato sauce, sautee garlic and onions and then put some water then simmer, add sugar and some spice to add taste
if not in the mood for red sauce, use mushroom sauce intead and there it goes
