that was on watchdog or a similar show a couple of years ago but i can't remember the answer! might be something to do with the fact they add water to the pork. eg start with 100g or pork and they add 8g of water????
found the proper answer:
Made at our sausage factory in Germany, it is pasteurised for food safety, and is made with 27g of meat for every 25g sausage. This is because the meat loses some weight due to moisture loss during the drying process

Peperami? Huuueeeey! Ruuuuuth! It says it is pork but what part of the pig is used in it? It is probably the worst meat I have ever had the misfortune to eat, a lot worse than McDonalds or Burger King even.
When you bite into it, think of how it is made. It is recontituted meat, which means it has been laying around in a big heap on the factory floor and has been swept up to be cooked by some drongo with a scabby shovel. You are eating pigs eyes, testicles, lips, feet, brains, bowels and all the offal God sends when you bite into that. Avoid.

They made the peperami bigger by say 10% and estimated the amount of pork in relation to the previous, smaller peperami?

As one answerer has already stated, it contains 108% pork because of the drying process which involves moisture loss. So 27g of meat are in every 25g packet because it's dehydrated meat. Yum!

its a dehydrated product, so probably its by weight, it may have started with say 100g meat but been dried to 80g, so perhaps there is a loophole in the labelling that lets them list ingredients by preprocessing weight. Bit odd though

Maybe compared to another brand of spicy sausage it can contain 108% (i.e. 8% more) ...thats the only thing I can think of.

It must be a misprint. Perhaps is should be 18% or 10.8%....as it's impossible to have more than 100% meat.
