Lisa's Sweet Potato Pie

2 medium sweet potatoes, boiled, peeled and mashed
1 cup firmly packed dark brown sugar
1/2 cup sweetened condensed milk
1/4 cup (1/2 stick) butter or margarine, melted
2 Tbsp. flour
1 tsp. ground cinnamon
1/2 tsp. ground nutmeg
2 eggs, slightly beaten
1 tsp. vanilla
1 unbaked 9-inch pastry shell
1-1/2 cups thawed COOL WHIP Whipped Topping
PREHEAT oven to 400°F. Mix sweet potatoes, sugar, milk, butter, flour, spices, eggs and vanilla in large bowl until blended.
POUR into pastry shell. (Shell will be quite full; filling will not rise over sides.)
BAKE 30 to 35 minutes or until top is puffed and browned. (Filling will be soft, but will set while cooling.) Cool on wire rack at least 2 hours. Serve each slice with 2 tablespoons whipped topping.

2 cups peeled, cooked sweet potatoes
1 1/4 cups sugar
1/2 stick melted butter
2 eggs
1 teaspoon vanilla extract or 1 to 2 tablespoons bourbon
1/4 teaspoon salt
1/4 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1 cup milk
9-inch unbaked pie crust
3 egg whites
Preheat the oven to 350 degrees F.
For the filling, using an electric hand mixer, combine the potatoes, 1 cup of the sugar, the butter, eggs, vanilla, salt, and spices. Mix thoroughly. Add the milk and continue to mix. Pour the filling into the pie crust and bake for 35 to 45 minutes, or until a knife inserted in the center comes out clean. Place the pie on a rack and cool to room temperature before covering with meringue.
For the meringue, using an electric mixer, beat the egg whites until soft peaks form; beat in the remaining 1/4 cup sugar 1 tablespoon at a time. Continue beating until the sugar dissolves and the mixture is glossy and stiff, but not dry. With a rubber spatula, spoon the meringue onto the pie, forming peaks. Make sure the meringue touches the crust all around. Sprinkle with a pinch of granulated sugar. Bake for 10 to 12 minutes, or until delicately browned. Cool and serve.

1/3 c Corn syrup
1/2 ts Salt
1 ea Unbaked pie shell
1/2 c Packed brown sugar
3 ea Eggs,lightly beaten
1/3 c Milk
1 ts Vanilla extract
Instructions
Cream butter and brown sugar in bowl until light and fluffy.Blend in sweet potato and eggs.Add next 4 ingredients;mix well.Pour into pie shell.Bake in a 425 degree oven for 10 minutes.Reduce heat to 325 degrees and bake 35 to 45 minutes longer or until well set.

1 small can (5 ounces, about 1/2 cup plus 2 tablespoons) evaporated milk
1 teaspoon vanilla
3 eggs, beaten
1 1/2 teaspoons cinnamon
2 prepared pie shells, unbaked
PREPARATION:
Mix butter, potatoes, sugar and evaporated milk until well blended. Add vanilla, eggs, and cinnamon; mix well. Pour into the prepared pie shells. Bake in a 350° oven for about 1 hour, until set.
Makes 2 pies.

It is easy, same as pumpkin pie, you should buy a ready bake pie crust .Boiled sweet potato, mashed add few spoons of flour, some cream to make it soft, some sugar (not much because the potato is sweet) some salt and pour onto pie crust, you can decorate with thinly slice sweet potato by lay them on top of the filling until all covered, bake in medium heat oven until light brown, served with ice cream. 2 eggs, 3/4 cup sugar, 1/2 teaspoon salt, 1 teaspoon cinnamon, 1/2 teaspoon ginger, 1/4 teaspoon cloves, 1 2/3 cup evaporated milk, 16 ounces mashed cooked sweet potatoes.
Heat oven to 425 degrees, prepare crust. Beat eggs slightly; beat in remaining ingredients. pour into prepared crust and bake 15 minutes or until knife comes out clean when put into center of pie.

Honey, your best-bet, would be to type in your address bar: foodnetwork.com, and once on their site, just request Paula Dean's sweet potato pie, she's a "Southern Gal" and cooks like "Nobody's Business" and I highly recommend her, or Ina Garten's recipe's, she used to cook for the "White House" many years ago, but, got tired of taking orders from them, so she went out on her own, and I have a couple of her books, and she makes all the recipes, easy to read & understand......... Or, even Rachael Ray, is a pretty simplistic, type of "Cook" shoot, she has a Meals, in an hour, show, so she's got to have a sweet potatoe pie recipe, being that her father, is a "Southerner, too" and she talks alot about his recipe's and her Italian mothers cooking too... take ur sweet potato wash it dry it poke it with some holes wrap it in foil and place in ur oven at about 250 degree F for (depending on the )size 1-2 hours or until knife goes through it . u cna eat the whole thing skin and all . i liketo mash it after cooking it and add butter brown sugar to taste and a pinch of salt .....

buy a CAN of sweet potato and look on the label for a receipe, or look on a CAN of pumpkin , substitute sweet potato for pumpkin
filling. I know you will need evaporated milk, sugar and eggs, and I would put some maple syrup in it, maybe a tablespoon or so.
