Spinach Salad with Hot Bacon Dressing
1/2 pound bacon, diced
1 onion, large, diced
1/2 cup white vinegar
1 teaspoon salt
1/2 teaspoon black pepper, ground
1 to 2 teaspoons sugar
2 tablespoons cornstarch
1 cup chicken broth
1 pound spinach, cleaned, stemmed, dried
Saute the diced bacon until crisp.
Drain and set aside.
Saute the onion in the bacon drippings until translucent.
Add the vinegar, salt, pepper and sugar.
Dissolve the corn starch in the consomme and add to the sauteed mixture, stirring until slightly thickened.
Cook over medium heat.
Return the cooked, diced bacon to the dressing.
Divide the spinach among 4 salad plates and pour on the hot dressing.
Serve immediately.
NOTE:
be sure not to scorch the dressing while cooking.
The dressing can be adjusted by adding more vinegar for a more tart, or by adding more sugar for a sweeter taste.
Dressing For Spinach Salad
1/2 cup onions, chopped
1/4 cup ketchup
1/2 cup salad oil
1 teaspoon worcheshire Sauce
2 cloves garlic, crushed
1/4 cup vinegar
2 tablespoons sugar
1 teaspoon salt
1 teaspoon pepper
Combine dressing ingredients and let sit for at least half an hour.

My grandparents would stop at this restaurant for their spinach salad every time they could possible drive past it. It was 3 hours from their home! They finally got the chef to give them the recipe somewhere around 1960. The restaurant still makes the same dressing! We all love this dressing. I even use it on Romaine lettuce some of the time! I even have a little left in the fridge now. CELERY SEED DRESSING (FOR SPINACH SALAD) From The Golden Lamb, Lebanon, OH 1/2 Cup Sugar 1/2 tsp. Salt 1 tsp. Dry Mustard 1 tsp. Celery Seed 1/4 Cup Wine Vinegar Combine above and mix well. Slowly add 2/3 cup Salad Oil. Continue stirring/beating until thick. Refrigerate. Great on spinach, head lettuce or tossed salad! For spinach salad, I normally use spinach, crumbled bacon, sliced hard boiled egg and sliced fresh mushrooms, topped with this dressing.

SPINACH SALAD DRESSING
Ingredients:
1 tbsp. olive oil
1/2 cup onion
2 tbsp. shallots
1 clove garlic
1-1/2 oz. bourbon whiskey
1/4 cup balsamic vinegar
1 tsp. Worchestershire sauce
10 tbsp. brown sugar
1/2 tsp. salt
1/2 tsp. fresh ground pepper
Directions:
In a sauce pan, saute onions in olive oil until translucent. When onions are soft, add the shallots and garlic. Add in the boubon, balsamic vinegar, 2 tbsp. brown sugar and salt and pepper. Bring mixture to a boil, then reduce to a simmer. After mixture has reduced to 1/3 of original level, check seasoning. Add remaining sugar, salt and pepper to bring balance to mixture. (There should be a balance between the sweet, and sour.) Salt, will bring out the flavors, salt until the flavors become bright, but not too salty. Serve hot over raw spinach or use for a beef marinate. Enjoy.

1 tablespoon Worcestershire sauce
1/2 cup mayonnaise (Hellman's or Dukes)
1 tablespoon grated onions
Mix all ingredients together.
Serve over a spinach salad topped with boiled eggs, real bacon bits, with toasted sliced almonds.
Add a little freshly grated parmesan cheese on top, if desired

2-3 servings 1 cup 10 min 10 min prep
Change to: cup US Metric
1/2 medium onion, finely chopped
1/4 cup cider vinegar
2 tablespoons distilled white vinegar, for 'bite'
1 tablespoon sugar, to taste (originally had 1/4 cup. but that's way to sweet for me now)
1 teaspoon salt
1/2 teaspoon garlic granules
1/4 teaspoon fresh ground black pepper, to taste
1/2 teaspoon sweet paprika
1/2 teaspoon dry mustard
1/2 teaspoon celery salt
1/2 teaspoon srirachi sauce (preferred) or 1/4 teaspoon Tabasco sauce, to taste
1/2 cup extra virgin olive oil
Combine all ingredients in a jar, except vinegar, and shake thoroughly to mix.
Allow to set at room temperature for 30 minutes, shaking occasionally, add olive oil, shake again, and refrigerate until needed, but at least 1 hour.
Shake and toss with spinach salad (spinach, hard-boiled egg, sliced fresh mushrooms, real crisp bacon bits, croutons, etc.) or other greens.
Note: Use the Sriracha hot sauce if you can find it.
It adds a lot of flavor, not just heat!

Try:
Olive oil (3 parts)
Balsamic Vinegar (1 part)
Oregano
Pinch sugar
Pinch salt
Freshly ground black pepper
Dash sesame oil
Sesame seeds
Pinch red chile flakes.
I don't have exact measurements - I make it by sight and then taste it to see how it is. Just go lightly on the vinegar because it is strong and can overpower the rest of your salad flavor. The sesame gives the dressing and salad a nice nutty flavor. Good luck!
