Dont do it over night, that ruins the naural qualities of the meat, you should only marinate steak for 30 mintues. You may also want to try just a dry rub for 30-1hr prior to cooking. I have found the best way to use lowerys season salt and a dash of lemon pepper for 30 minutes and then cook on a grill. when you finish cooking, place a SMALL pat of pure butter on the center and allow it to melt.

I think the longer the better the taste it will be.Minumum should be an hour, for the floavour to be absorb into the meat. But make sure it is marinated under normal room temperature, and not in the fridge.

2 hours is fine... although, if the dressing has some citric acid like lemon in it, it will "cook" the meat rendering it somewhat greyish before you even cook it, altering texture... when there is acid in the marinade u are using for meats, you should shoot for less time like 30 mins... anyways, pat very dry before cooking it

and please... if you have spent the good money for sirloin which is tender, dont pound it or alter it in any form, leave this pounding for cheaper, tougher cuts of steak

I'd say 2-3 hours in the fridge should do it.

Overnight in a plastic zip lock baggie. first take a meat hammer, and pound the meat, to tenderize it, then put it in the baggie with the marinade, overnight....or for the longest period of time, that you can.
