Apricots (fresh or dried)
Ants on a log (raisins and peanut butter on celery)
Applesauce (or another treat made with apples)
Asparagus
Apple Jacks cereal
Alphabits cereal
And FWIW, I don't think apples are boring to a preschooler. My 3-year-old daughter will happily eat apples anytime. One idea might be to take a variety of apples so that they could taste the differences -- some are sweet, some are sour, some are more bitter, etc.
Hope that helps!

You could do something cute with apples like carve them into capital A's but that might be pretty difficult and you can't really do that with your son. How about Applesauce with sprinkles on it that would be cute. You could get sprinkles in the shapes of alagators or ants or some other kind of shape that starts with A. I think that would be a cute idea.

Ants on a log- (celery with peanut butter, or cream cheese for allergic kids, and raisins for the ants) Kids love pretending to eat bugs. Have fun!
