If you wanted to go really simple just marinade in Italian Dressing. For something a little more fancy you can try some Worshtisire sause, with some garlic, hot peppers, a little vinegar, or substitute the garlic with some ramps.

Try marinating in this
Balsamic Garlic Vinaigrette
1 clove garlic split
1 T dijon mustard
3 T balsamic vinegar
salt and pepper to taste
1 C extra virgin olive oil
Rub the split garlic clove on the inside of a small bowl, then discard. Add the mustard, vinegar and salt and pepper to the same bowl and whisk well. Add the oil in a slow steady stream, whisking continuously until the ingredients are emulsified. Serve at room temperature.

To make it really simple I just get a bottle of one of the Italian vinaigrette type salad dressings and use that as the marinade. Very fast and easy to do and makes for a very tasty steak.

sounds weird but trust me, i'm a butcher....orange juice and garlic. add just enough garlic to taste and let the meat marinate until it turns grey. the acid in the oj is also slow cooking it while it also tenderizes it. once grey, remove and grill!
