Down Home Crab Cakes
2 (6 ounce) cans crabmeat, well drained, flaked
1 cup seasoned dry bread crumbs, divided
1/2 cup KRAFT Mayo Real Mayonnaise
1 egg, slightly beaten
2 tablespoons KRAFT Original Barbecue Sauce
2 tablespoons chopped green onion
1/4 cup butter or margarine
Mix crabmeat, 1/4 cup of the bread crumbs, mayo, egg, barbecue sauce and onion in large bowl. Cover. Refrigerate 2 hours. Shape crabmeat mixture into 8 patties. Coat patties with remaining bread crumbs. Spray each patty on both sides with no stick cooking spray. Cook patties in butter in large skillet 4 to 5 minutes on each side or until firm and golden brown on both sides.

A fantastic, VERY FAST, safe,versatile and fun way of cooking complete dinners is pressure cooking. They cost anywhere from $40 to $250. Don't listen to stories about them exploding because the modern ones have plenty of safeties built into them. An example is making a complete corned beef and cabbage dinner with all the veggies in about 45 minutes. I recommend getting an electric programmable cooker that starts up and stops by itself so you don't have to monitor it on a stove top.

Even on days I am home, I like to make my meals in a crock pot. That way I don't have to stop my projects to fix dinner. Stuffed peppers or piggies in the blanket are favorites. There are a lot of boxed crock pot dinners that have everything. I wouldn't recommend them for everyday, but they aren't bad at all. Hope this helps

I always like truly simple...crackers with warmed brie for starters. warmed in the Microwave for a minute it is gooey heaven. Whilst you are enjoying a glass of wine or soda pop with the appetizer, dinner can be cooking. Chicken breast topped with your favorite italian dressing takes about half an hour in the oven. Wrap up two sweet potatoes and bake with the chicken. Fresh (or frozen) green beans sauteed with garlic and a can of stewed tomatoes round out the dinner. For dessert, nothing beats a scoop of her favorite ice cream resting on a pizzelle cookie with a sprig of mint and and a strawberr as a garnish. Total prep and cooking time...45 minutes.

Buy some stuff already prepped, like salad bar veggies already cut up for stir fry, chicken strips already marinated and cooked, deli roasted chickens etc.
Fastest way to cook? Stir fry.
Consider prepping food for the week on weekends. Spend a couple of hours in the kitchen on a day off and have meals all week that you only have to heat up or complete quickly.
Examples: On Saturday you could roast a chicken, cook some rice, cook a roast with carrots and potatoes and gravy. In addition, you buy a bag of salad mix and some pre-cut salad bar veggies.
On Monday you have roasted chicken with rice and steamed veggies.
Tuesday - Roast, carrots and potatoes w/gravy
Wednesday - Roasted Chicken Salad with lots of fresh veggies
Thursday - Cut up the roast, carrots and potatoes, throw in some frozen peas, the gravy and a can of tomatoes and you've made beef stew
Friday - Make Fried Rice out of the rest of leftover rice, veggies and beef or chicken.
Consider making meals in advance, in larger quantities and every time you cook, you've made dinner for two or three nights. Freeze the rest for next time. That way you have your favorite long cooking foods more often in less time. Meat loaf, spaghetti sauce, chili and soups all freeze nicely.
Crockpots are great and they make smaller versions now. Just throw in anything you want, come home, it's ready to eat! Lots of "slow cooker" recipe books available now. 20 minutes of prep in the morning or even the night before gives you a great meal the next night after work.
Make easier choices for yourself too. Use baby carrots instead of carrots that have to be scraped and cut up. Buy chicken or beef already cut into stew cubes or strips. Buy fresh broccoli already prepped into florets. Jar pasta sauce is just as good as homemade, just jazz it up with some ground beef, italian sausage, diced chicken, spinach or italian cheese. Pasta is your friend. Make it ahead and then toss it with salad stuff and dressing for a pasta salad or add meat and sauce and pop it in the oven for a quick casserole.

Four cheese, four mushroom, Escargot Pizza. Cook the escargot till almost crunchy in garlic and butter. Cook the mushrooms in the snail butter. Grease the pizza pan with the snail butter. Spread the dough, top with pizza sauce, add grated cheeses (your choice) top with mushrooms, escargot and bake until perfect. Open some good red wine and enjoy.

1/2 lb chicken breasts (cleaned, cubed into 1"-2")
1/2 can of salsa (any kind you like, the chunkier, the better)
salt & pepper to your taste
grated cheese (optional)
Stir fry all of the stuff together until the chicken is cooked.
Add salt, pepper, and cheese as you wish.
(may serve with instant rice)
