I have a bumper crop of tomatoes and am not sure which is best.

I personally think frozen tomatoes are the best in comparison to canned ones.

Frozen tomatoes never change colour or even the taste. Frozen tomatoes are very easy to use even.

If you have that large a crop of tomatoes I would suggest canning them using a pressure cooker/canner. They work great and fast and you can safely can whatever else comes out of your garden too. Pressure cooking and canning is a fantastic and safe way to not only can but also to prepare complete meals very, fast, safely and all in one pot.It eliminates about 75% of all cooking times. You can readily find them on the Internet and they range in price from $40 to $250. If you do pressure canning you will need the largest sized unit on the market to process as many mason jars full of product as possible per each canning session.

I prefer freezing tomatoes.

I just bought a bushel of roma tomatoes. I boiled them down after removing the skin. I made a sauce. Then I canned them with the mason jars.

I had some of it left over so I made some pasta. ***YUM ******

canning tomatoes, cuz when you freeze them, the tomatoes get yucky.
