I need a good recipe dat includes bananas, they're startin ta get a lil rotten. thx!!!!!!

3-LAYER BANANA CAKE

3 c. plain flour
2 c. sugar
1 c. shortening (2 sticks butter)
3/4 c. buttermilk
2 eggs
2 tsp. vanilla extract
2 tsp. soda
2 c. mashed ripe bananas

Mix sugar, eggs, and shortening; add buttermilk, flour, soda, and vanilla. Add mashed bananas and mix well. Bake at 350 degrees for 30-35 minutes.

FROSTING:

1 (8 oz.) pkg. cream cheese
1 box confectioners sugar
1 c. chopped pecans

Soften cream cheese 2-3 hours; cream and add confectioners sugar. Blend well and add 1 cup chopped nuts.

Banana Nut Bread is perfect for bananas that are a little more than ripe.

2 cups flour
1 t. baking soda
1/2 t. salt

Sift the above ingredients together.

In a separate large bowl, cream:
1/2 cup softened butter
1 cup sugar

Next, add:
2 eggs
1 t. vanilla

Mash three large or four medium bananas. Add them to the above mixture. Then, slowly mix in the flour a little at a time until all the flour is blended in well. Last, add 1 cup of chopped nuts.

Place the batter into a well-greased 9x5x3 loaf pan and bake at 325 degrees F for 55-60 minutes.

If you are overwhelmed with too ripe bananas, toss them in a freezer bag and squeeze out the air. That will give you time to explore banana recipes or to decided to make smoothies.

A very simple way to use them is to cut them in half, or thirds if very long and insert popsickle sticks or skewers. Freeze them hard. Get a bottle of the ice cream topping that hardens into a chocolate shell coating, and when the bananas are frozen, dip in the shell and if you like, roll in chopped nuts. The coating should harden instantly and the banana pops can be eaten or stored in zipper bags in the freezer. You can also melt half semisweet and half milk chocolate chips in the microwave, adding a few drops of oil, and dip in that. A good variation is white chocolate rolled in coconut.

Riped bananas make a delicious cake. Look into any good receipe book. You can also make some kind of pudding using the bananas with a bit of sugar and egg whites mixed with an egg beater until thick.

Try them in a sandwich with peanut butter.

I would go with banana nut bread idea. You can even use pancake mix to make it (just use less milk to compensate for the bananas (I put all wet ingredients into the blender including the bananas, less work than mashing) and use pecans if you can get them.

Banana Loaf:

225g Self raising flour 50g Butter
150g Caster sugar 1 egg
1tsp Baking powder 2tsp milk
5 ripe bananas Opt: choc chips/ fudge pieces/ raisins

Preheat oven to 190C Gas mark 5
Grease a loaf tin

1. Add sugar and butter to bowl, mix until fluffy and light
2. Add egg and milk and mix
3. Mash banana's and add to mix
4. Add flour and baking powder. Mix well.
5. Add optionals if needed.
6. Put mix into greased loaf tim and bake for 50 mins, until golden.

If you want icing, add 1 banana to icing sugar (might need a little bit of water) and mix. Add to loaf once baked.

Slice when cool. It's YUM!

Make a Banana Cream Pie: yummy
1 ea (9-inch) baked pastry shell
3 T Cornstarch
1 2/3 c Water
14 oz Sweetened Condensed Milk
3 ea Egg yolks, beaten
2 T Margarine or butter
1 t Vanilla extract
3 ea Bananas
1 x Lemon juice
1 x Whipped cream

In heavy saucepan, disolve cornstarch in water, stir in sweetened
condensed milk and egg yolks. Cook and stir until thickened and
bubbly.

Remove from heat; add margarine and vanilla. Cool slightly. Slice
two bananas; dip in Real Lemon-brand and drain. Arrange on bottom
of prepared crust. Pour filling over bananas; cover. Chill 4 hours
or until set.

Spread top with whipped cream. Slice remaining banana; dip in Real
Lemon-brand, drain and garnish top of pie. Refrigerate leftovers.

If rotten, then better to throw them away.

A simple dessert. Steamed bananas. Steam whole bananas with skins on for about 5-10 minutes.

Remove skin. Sprinkle grated coconut over it and serve. Simple but nice. Try it and let me know.

banana pudding: you will need 3 Large containers of Vanilla "cozy Shack"
pudding ( in refrigerator section with all the other puddings) marshmallows (Kraft),Nabisco Vanilla Wafers ,2 bottles of Rich and creamy Whipped cream (spray bottle)
Mix the pudding with as much whipped cream that you desire,than add 2 cups of marshmallows (or more)cut up your bananas in slices and get your cookies out and ready.Ina big Bowl line it with the vanilla wafers than some pudding,banana slices,than vanilla wafers,pudding, bananas,etc...til you are done. garnish with pretty little decorations of whipped cream with a Vanilla wafer put in the middle of each decoration.....it is soooooooo good, let me know if you liked it ( i sometimes use 4 containers of Cozy Shack Vanilla pudding, because,I love alot of pudding and alot more cookies)
