Carrots, potatoes, celery are must haves.
Optional items are onions and mushrooms, etc. depending on what stew I'm cooking.
My favorites are Irish Stew, Oxtail Stew & Rabbit Stew.
To go my Guinness or Kilkenny's, or even poteen.

It depends on the type of stew, but I usually add an assortment of potatoes, carrots, mushrooms, beans, onions, garlic, peppers & crushed tomatoes. Along with a few good spices - caijun, oregano, basil & dried chilis. :)

In addition to the usual veggies, I love to add chunks of butternut squash. It is creamy and wonderful in stews and is packed with nutrients.
To your list I'd add onions as well. Or, maybe, shallots.
