Have a discussion with the doctors I am sure they can prescribe something that will ease the coughing.

Your mother needs something to help her sleep at nite such as Alprazolam, Ambien, or Lorazepam. Not a wimpy dose either. You want something that will make her sleep. Also, her physician can prescribe her some Tessalon Perles to swallow before she goes to sleep or some Tussionex. These drugs will help her stop coughing.
Just a note of information, once she starts taking sleeping medications, at 75 years old, it may make her a little confused or a lot confused. At her age, you have to decide what is more important, her comfort or her mentality. Also, make sure they prescribe her some pain medications. Morphine or dilaudid is the drugs of choice for cancer pain. If the doctor prescribes Demerol, this should raise a big red flag and you need a pain specialist to get involved. Hospice is an excellent program.
Not to sound like a know it all because I certainly have never met your mother, but have taken care of many cancer patients. I am assuming she sees an Oncologist and the stenting was done in an attempt to protect her ability to pass liquids thru her esophagus.

I don't know if it will help or not. But a friend of mines wife has breast cancer and been getting mouth sores from the chemo and radiation. She started eating yogurt and her sores have healed.
