I have seen 250 yard par 3's and 4's. So what is the cutoff line? Has there ever been a par 6??

Yes it is yardage and then you have a few factors like wind direction down hill or up hill and if they can make the hole play shorter by cutting corners
standard par 3 230
par 4 476

Par is the normal number of stroke an average professional would take to get the ball in the hole from the tee.
Usga officials rate golf courses according to their difficulty and determine what par for that hole should be. Distance is one of the more significant factors although only one, hazards, prevailing wind, gradient, the green itself and even weather can be considered when rating a hole.
The guidelines for Par is < 280 yards is a PAR 3
> 480 yards is a par 5
Others are generally Par 4's.

There are course with Par 6's but for the most part they are rare exceptions and novelty's.

There is no cutoff line. There has never been a par 6 in a PGA event, or any course I have ever played. The U.S. Open, for example, is typically played at a very tough course where I would not be surprised to see a 500 yard par 4 but at your run-of-the-mill public golf course would rarely host a 500+ yard par 4. In otherwords there is no cutoff and it is subjective and based on the whim of the powers that be.
