Luke 3:16 states "John answered, saying unto them all, I indeed baptize you with water; but one mightier than I comes... he shall baptize you with the Holy Ghost and with fire" Why don't churches baptize people with fire?

baptism by fire is just a figure of speech. it means to receive the Holy Ghost.

Many times when people saw God or other Heavenly figures, they appeared as Fire. The Holy Spirit is like that--but I also took Baptism by fire to mean we become more like Christ when we go through trials in our life. (I think of God as the Potter, we are the clay, and the Fire is the kiln that refines us to perfection.)
