It really depends on where you are flying from and where you are flying to. The major international carriers such as Cathay Pacific, Singapore Airlines, British Airways and Emirates all offer really good service. Here in the U.S., JetBlue and Southwest have been rated as the best for service and reliability.

I am an aircraft mechanic,
I must say, there are a lot of airlines i WILL NOT fly on, no mater how dire my situation.
The best in America is definitely Southwest Airlines. They only fly B 737's, have all the tooling required on site, have all the parts, and have mostly completely standardized their processes from what i hear. They also pay the most to mechanics (more than twice the wages of anyone else), and in general, keep us quite happy. Happy mechanics are good mechanics. High standards to get into Southwest, as well as a long waiting list to get in. Basically that they only fly one type aircraft is key, each type has different tooling and different processes so when you have mech's working 7 different types confusion is bound to happen at some point. We are always under constant rush to push an aircraft out, and if we only have to deal with the same type of aircraft on the job it makes it much easier especially getting parts and tooling, and engineering.
Internationally, Quantas is awesome as well as British Airways.
Definitely fly Southwest if you can though.

Cathay Pacific. It has one of the best services, the entertainment that they provide is almost on par with Singapore Airline and Emirates and the price is quite cheap in any sense where there is a lot of promotion around the world. It has also been awarded the best airline of the year 2006.
