What's your favorite Greek recipe? Anything - appetizer, salad, main dish, dessert?

Thanks so much!

I'd REALLY like some recipes - I know about Greek food but I don't know exactly how to make the dishes properly. Thanks!

Don't know much about the recipes. But you should go to a Greek restaurant. They make the BEST fish. No one compares to them. Also you should try something called "avgolemono soup" or lemon soup - EXCELLENT! Their feta cheese is great. And try something called "spanakopita". It's puff pastry stuffed with spinach and feta cheese. Greek salad is spinach leaves, tomato, feta, kalamata olives, olive oil. And there is a drink called "ouzo". It's a licorice tasting liquer. Many people don't like licorice, so you may not like it. Similar to anisette. But not as sweet. There is also a brandy called "metaxa". It has a very floral flavor.

Easy Greek Chicken Casserole:

This easy one-dish meal is prepared and cooked in only one pot, saving you space and cleanup. You can decrease the sodium by using less anchovy paste or by replacing it with the olives.

1 tablespoon olive oil
2 cups chopped onion (about 1 large)
2 tablespoons dried thyme
1 to 2 teaspoons black pepper
10 garlic cloves, minced
6 cups (1/2-inch) cubed red potato (about 2 pounds)
2 cups (1-inch) cut green beans (about 1/2 pound)
1/4 cup water
2 tablespoons anchovy paste or finely chopped olives
2 (14.5-ounce) cans no-salt-added diced tomatoes, undrained
8 skinned, boned chicken thighs (about 1 pound)
1/2 cup (2 ounces) crumbled feta cheese

Preheat oven to 375°.

Heat olive oil in a large Dutch oven over medium heat. Add the onion, and sauté for 3 minutes. Add the thyme, pepper, and garlic; sauté 1 minute. Increase heat to medium-high. Add potato; sauté 8 minutes or until potato begins to brown. Stir in green beans, water, anchovy paste, and tomatoes. Remove mixture from heat. Nestle chicken thighs into potato mixture. Top with feta cheese. Cover and bake at 375° for 45 minutes.

Yield: 4 servings (serving size: 2 thighs and 2 cups potato mixture)

For greek chicken I marinade it in ordinary italian dressing that's been mixed with some lemon juice and olive juice (like from a can of olives) and then grill it.

Take some meat, cook it, and put it on a stick. Or, put it on a stick and cook it. Lamb and pork work the best for this. Add some vegetables.

Dessert:
Finikia-
INGREDIENTS:
1/2 cup butter, softened
1/2 cup superfine sugar
1 grated zest of one orange
1/2 cup corn oil
2 1/2 cups all-purpose flour
1 1/2 cups semolina
4 teaspoons baking powder
1 teaspoon ground cinnamon
1 teaspoon ground cloves
1/2 cup orange juice

1 cup water
1 cup white sugar
1/2 cup honey
1 cinnamon stick
2 teaspoons lemon juice

1/2 cup finely chopped walnuts

--------------------------------------------------------------------------------

DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
In a large bowl, cream together the butter, superfine sugar and orange zest. Gradually mix in the oil and beat until light and fluffy. Combine the flour, semolina, baking powder, cinnamon and cloves; beat into the fluffy mixture alternately with the orange juice. As the mixture thickens, turn out onto a floured board and knead into a firm dough. Pinch off tablespoonfuls of dough and form them into balls or ovals. Place cookies 2 inches apart onto the prepared cookie sheets.
Bake for 25 minutes in the preheated oven, or until golden. Cool on baking sheets until room temperature.
To make the syrup: In a medium saucepan, over medium heat, combine the water, white sugar, honey, cinnamon stick and lemon juice. Bring to a boil and boil for 10 minutes. Remove the cinnamon stick. While the mixture is boiling hot, dip the cookies in one at a time, making sure to cover them completely. Place them on a wire rack to dry and sprinkle with walnuts. Place paper under the rack to catch the drips. Keep finished cookies in a sealed container at room temperature.

Appetizer:
Saganaki-
INGREDIENTS:
8 ounces feta cheese
1 egg
1 teaspoon finely chopped fresh oregano
1/2 cup all-purpose flour
2 tablespoons olive oil
freshly ground black pepper
2 large ripe tomatoes, sliced
1 lemon, cut into wedges

--------------------------------------------------------------------------------

DIRECTIONS:
Slice feta into 2x3/8 inch squares, about 8 slices. In a small bowl, beat the egg with the oregano. Dip each slice of feta in egg, shake off excess, and coat in flour.
Heat olive oil in a frying pan over medium heat. Quickly cook cheese in olive oil until golden, turning once. Pat dry with paper towels.
Arrange feta on a plate with thick tomato slices, season with black pepper, and garnish with lemon wedges.
