i know that's a silly question, since obviously we have been sun drying tomatoes for a lon time without them going bad...but what do i have to put on them to prevent them from turning moldy or rancid??? thanks. :-)

You should be able to sun dry them without mold for sure, since tomatoes are acidic. Just make sure they have enough ventilation in the drying racks, turn them pretty often, and they should shrivel right up to almost nuthin' for you.

auntiegray gave a good answer, I'd just like to point out (picky person that I am) that only fats turn rancid. Tomatoes would be limited to rotting, molding, and being carried off by critters.
