Okay, first of all eating sugar does not cause one to become diabetic. Sugar is the best thing to counteract the acidity in spaghetti sauce but if you really don't want to use it a non-nutritive sweetener such as Splenda would do the trick.

A dash of sugar will not make you a diabetic. A teaspoon of sugar won't hurt, and will cut the acid in the tomatoes.

You can always use Splenda, as a substitute for sugar. It works the same and is used by diabetics

A pinch of sugar in your spaghetti sauce is not going to make you a diabetic. And that's all it takes to take the wang out of the sauce. If your worried about becoming a diabetic, worry more about the starches. That would be the pasta, and the bread that usually goes with a spaghetti meal.

lol You will not become diabetic by adding a couple pinches of sugar to your spaghetti sauce! Otherwise I do not think their is much you can do. The type of tomatoes and where they are from make the difference as far as sweetness is concerned...although the sweeter the tomato the more the sugar content (and yes even tomatoes contain sugar). Tomatoes from San Marsano are supposed to be the best. Read the labels when you buy your canned tomatoes.

OK, I can't let this one pass.

Using sugar in your food WILL NOT make you diabetic!!! If on the off-chance you become diabetic, you will want to avoid putting sugar in your food. But sugar does not cause diabetes! If there was a known cause, we could probably cure it, or at least prevent it.

_____

Try Spenda instead of sugar. You may also try using a very light marinara (barely cooked) rather than a thick sauce made from tomato paste. I hate tomato paste!

If you use some sugar for your sauce, you will not suddenly become diabetic. No worries on that. Try some spices, it will take away that sour taste. Just add what you like and you'll like your food. Simple as that....G-luck!

I noticed that spaghetti sauce becomes bitter if too much tomato paste is used. If that could be the answer, then reduce the amount of tomato paste and add more tomato sauce or whatever else you use in your sauce.

You can't become diabetic from adding sugar to the sauce. The point of the sugar is to cut some of the acid of the tomato. If you simmer the sauce for several hours, it will not be so bitter either. (I am talking about homemade sauce here, by the way)
