If we give you the phone number, then you guys are calling non-stop expecting something more. And that's not always the case with a one night stand...hence the "one night" thing. Email is just easier to blow someone off with. We can answer if we like you and mark you as spam if we don't. So do the courtesy email and see what happens. If she emails you back, it may lead to something. If it's just a "thank you", I had fun...well then, you got your answer.

Does she have a phone? Maybe e-mail is her only option right now, I have done that when I am going to change my number, just moved to an area, etc.

She also may not want to come on too strong. Most women think that for guys a one-night stand is all there is... she may have decided that leaving her number may scare you off. Shoot her over a note asking to see her again and see where it goes.
