I just cooked a dish with eggs that were out in my kitchen (in their shells) for 24hrs.
will my dish make me sick?

Do you think the chickens nest over open refrigerators? Eggs don't spoil at room temperatures. It used to be quite common to keep them in a bowl on the kitchen counter. If you have any doubts about an egg, put it in a bowl of water. A spoiled egg generates sulphur dioxide and will float. (If you crack it open, there will be no doubts in your mind if it is any good!) Cooking the egg will kill any bacteria present anyway. There is 'some' danger of picking up salmonella from raw eggs. In the 70's a lot of chicken feed was made from fish meal from South Amerida. The fish meal was piled up outdoors where seagulls had access to it. The seagull poop contains salmonella and it got into the US domestic chickens. (Salmonella will penetrate an egg shell). My understanding is that the chicken feed is now sterilized to prevent this.

Most ppl keep eggs at room temp if they use them readily. Although I am sure I will get some message from some nut ball telling me I'm promoting the spread of disease. I eat eggs everyday they sit on a basket on my counter. Its the way my grandma and my ma did it...I'm fine.
