Easy.

Roasted Cauliflower.

Chop the florets to larger than bite size ('cause they will shrink). Generously drizzle olive oil and then sprinkle with kosher salt. Roast for 18 min at 400 degrees. Serve. Cheap and easy. And best of all better than spaghetti, mashed potatoes, and certainly less work than fried or baked chicken.

Most people would eat pasta or rice with veggies.If you have to use meat, use chicken and leave it on the side on the side. Don't put cream in the pasta. Doesn't go with meat, plus you might have some lactose intolerant guest. Keep it simple, prepare salads and side dishes. And those party trays are good too. Depends on the occasion and the people. I think you can't go wrong with Chinese, either...

salad idea:
bag of pre-washed lettuce; 8 oz can Mandarin oranges drained, 1/4 c craisins, 1/4 - 1/2 cup chow mein noodles, serve with light oil/vinegar dressing.

dinner: chicken pot pie with biscuits as topping vs. pie crust

Hot dogs and hamburgers with lots of different things to put on them. Or make lasagna. Make one with the ricotta and spinach - for the adults; and make the other with just meat sauce, noodles and cheese for the kids.

Or, just make whatever you want and have lots of fun desserts so everyone can fill up on that if they don't like what you made for dinner.
