Buy a box of Quaker Corn Meal. Directions are on the box. You can get white or yellow corn meal. You can make it sweet or unsweet. You can bake it or fry it. My family likes the sweet yellow cornbread baked the best.
There is also Jiffy cornmeal mix. It's pretty good too.

You can buy the package that is already pre-measured most you just have to add a few things eggs , water some call for milk . Mix it up and put in a cake pan or muffin tins which every you would like to have it. Will tell on the package how long and the temp ;of the oven. Let it cook the length of time check to see if ;you stick a toothpick in the center should be clean when you take it out for if batter is on the toothpick it still needs to cook a little bit more. Then take out of oven let cool slightly then cut into slices if you used the pan or pop out the muffins in the tin and enjoy your cornbread

Cornbread Mexicana
Ingredients:
1 1/2 cups flour
2 1/2 cups cornmeal
5 teaspoons baking powder
1 1/2 teaspoons salt
4 tablespoons sugar
1 tablespoon cumin
1 teaspoon chili powder
1 can whole kernel corn (15 ounce), drained
1 can green chiles (4.5 ounce), diced
2 eggs, beaten
2 cups milk
1 stick butter, melted, (1/2 cup)
1 cup grated cheddar cheese
Preparation:
Preheat your oven to 425°F.
Add all of the dry ingredients to a large mixing bowl and incorporate. Add drained corn and green chilies. Add eggs, milk, melted butter, and cheddar cheese.
Mix well. Pour into a 13 X 9 pan (1/4 sheet), or muffin pans that have been sprayed with cooking spray. Bake for 20 minutes or until golden brown. Freezes well

I just use the Jiffy Corn muffin mix. I use two boxes, add 2 eggs and 2/3 c. milk and mix well. Pour into 9X13 pan that has been sprayed with non-stick cooking spray. Bake at 350 for 30 minutes.
I have made cornbread from scratch by using corn meal, but I don't like it as well.

Yankee cornbread has sugar and is sweet like a cake; southern corn bread does not use sugar or very little. Here's my favorite Southern style recipe
preheat over 450
1 c self-rising corn meal; 8oz sour cream (or low fat yogurt); 8 oz cream style corn; 1/3 c canola oil; 3 eggs. Mix well with fork or spoon (do not use mixer)
best if bake in cast iron skillet, but if not available 8" or 9" cake pan for 20-30 minutes - may go longer depending if your oven runs hot, or until lightly brown on top and solid in center.
OPTIONS to add: sliced jalapeno peppers, 1/2 c cheddar cheese,

Mexican cornbread is always a favorite. Mexican cornbread with cornbread ingredients, cream style corn, green chile peppers, cheese, and more.
INGREDIENTS:
2 cups corn meal
1/3 cup melted shortening
1/2 tablespoon salt
1 tablespoon sugar
2 eggs
1/2 teaspoon baking soda
3/4 cup buttermilk or milk
1 can cream-style corn
1 can chopped green chile peppers (4 oz)
1 cup of shredded cheddar cheese
PREPARATION:
Preheat oven to 450°. Mix corn meal, shortening, salt, sugar, eggs, soda and milk. Add corn and chile peppers. Pour half of mixture in large, greased 9-inch pan. Put half of grated cheese over batter. Spoon remaining batter into skillet or pan and top with remaining cheese. Bake at 450° for 25 minutes. Enjoy.

This is how to make cornbread in the south. Pour your cornmeal into a bowl, then add a spoon of sugar,one egg , enough buttermilk to moisten it { it will still be thick}. then add a little water to loosen it. Then prepare your iron skillet, put about three spoons of bacon grease in it then heat the skillet. When it's good & hot pour your batter in and let it cook for a minute before putting it in the oven to bake. It will have a nice crust. Happy baking.

Sausage Onion Cornbread Recipe
INGREDIENTS:
1 cup yellow cornmeal
1 cup all-purpose flour
2 tablespoons sugar
2 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon baking soda
5 tablespoons butter
1 cup finely chopped onion
1 large egg
1 cup buttermilk, or use light sour cream or plain yogurt
8 ounces bulk sausage
PREPARATION:
Preheat oven to 350°.
In a medium bowl, combine cornmeal, flour, sugar, baking powder, salt, and soda. Using a pastry blender or 2 knives, cut in the butter until mixture resembles coarse crumbs.
In another bowl, whisk together the egg and buttermilk until well blended. Add to the cornmeal mixture and stir just until dry ingredients are thoroughly moistened. Heat a 10-inch cast iron or heavy oven safe skillet over high heat; crumble sausage into it. Brown sausage for about 2 minutes to render some of the fat. Add the onion to the skillet. Cook, stirring constantly, until sausage is browned and onion is tender. Remove from heat. Spread sausage and onion out to evenly cover bottom of skillet. Spoon cornmeal batter evenly over the sausage and onion mixture and carefully spread out. Bake for 25 to 30 minutes, until golden brown and firm. Using a knife, carefully loosen around the edge of skillet then immediately invert onto a serving plate. Cut into wedges. Serve hot.
Serves 8.

Southern Corn Bread
INGREDIENTS:
1 1/2 cups scalded milk
1 1/2 cups white corn meal
1 tsp. salt
2 Tbsp. shortening
2 1/2 tsp. baking powder
1 egg beaten
diced cooked bacon, optional
PREPARATION:
Mix milk with corn meal and stir in salt and shortening. Cool. Add baking powder and egg yolk and mix well. Fold in stiffly beaten egg white. Pour into greased pan and bake at 400° 20 minutes. Makes one 8 X 8 pan. If desired, sprinkle with diced cooked bacon before baking.

I buy the Aunt Jemima Self-rising White or Yellow Corn Meal Mix, it has flour, salt & baking powder already blended in, you just add oil, sugar (optional), milk and eggs.
Cornbread
3 Tbsp vegetable shortening, oil or drippings
2 cups Aunt Jemima Corn Meal Mix
1 to 2 Tbsps sugar (optional)
1 egg, beaten
Heat oven to 425 F. Heat oil in 10 inch oven proof skillet in oven 3 minutes; tilt skillet to coat bottom evenly.
Combine dry ingredients, Add milk and egg; mix until blended. Add melted shortening oil or dripping; mix well. Pour in to hot skillet; bake 20-25 minutes or until wooden toothpick inserted in center comes out clean. 9-10 servings.

this my kind of question ----- buy a martha white corn meal mix (wal mart 0.56) follow instruction on the bag ----use a no.10 cast iron skillet---pre heat skillet--- spray with pam ---or like --- then use tooth pick to see if it's done---there will be a nice brown crust top and bottom oh I forgot when the bread is done you have add it to a bowl of butter milk
