I would stay off the main drag (Hume and Federal Hwys) and wander down where the old road went. Turn off at Campbelltown and drive via Camden, Tahmoor, Picton etc. You will come back to the main road just north of Mittagong. Turn off at Mittagong and travel via Bowral and Berrima. Maybe a stop at fitzroy Falls. When you get to Goulburn take the road toward Braidwood, and travel via Tarrago and Bungendore to Queanbeyan, which is near Canberra.

This will take a bit longer, but a lot of these towns are quite pretty, particularly where they don't have through traffic any more. The countryside is also typical for the area, and you will see a lot more of it than you would travelling at 110 km/hr down the main road.

I think the scenic drive can take as long as you want. It usually takes me 3hrs to drive from Canberra to Sydney straight up the highway. But it really depends on how many little towns you want to stop at on the way and have a coffee.

Goulburn has a fair sized main street where you can shop and choose something for lunch. Also Bowral is qauint and picturesque, and they have the Don Bradman Mueseum.

In the early moring and evening you can often see kangroos near the road so you could stop by a mob of them and take a few pictures.
